Bruner/Cott’s Master Plan for Dining Service Renovation focused on the kitchens, serveries, and dining halls of Harvard’s five River Houses: Eliot, Kirkland, Lowell, Winthrop and Leverett. Target areas include traffic flow, kitchen equipment, HVAC and exhaust, lighting, elevators and conveyance systems. The Plan outlines preliminary budgets for phased construction. In the next step, Bruner/Cott designed the dining service renovations for Eliot and Kirkland houses, completed in 1999.
We worked closely with the house master and student committees for each House. Completed in a 13-week summer construction window, the two projects opened on time and on budget. Conceived as the ‘butler’s pantry’ to the ‘manor house’, the two reconfigured serveries reflect the details and color palette unique to the two dining halls, with traditional cabinetry and period lighting. The totally reconfigured kitchen features display cooking in each of the serveries.
